Ingredients: Pretzels 2 cups of warm water (110°F) 4 cups of all purpose flour 2 1/2 teaspoons of yeast 1 teaspoon of salt 1 tablespoon of sugar Oil Glaze 4 tablespoons of melted butter Pretzel salt or kosher salt (Most large flaking salts will do or just regular salt if you don't have any) Baking Soda Bath 1/2 *** of baking soda 9 cups of water Instructions 1. Preheat the oven to 400°F and line 2 baking trays with parchment paper. 2. Add the warm water to a bowl. 3. Add the yeast to the water and whisk it together. Set aside. 4. Grab a large bowl and mix together the flour, sugar and salt. 5. Pour the water-yeast mixture into the flour mix and stir until a dough forms. 6. On a floured countertop, knead the dough until it's no longer sticky. I recommend the slap and fold method. You just pick up the dough slap it on the counter then fold it in on itself. Repeat until it's not very sticky. But do whatever works for you. 7. Shape the dough into a ball and divide it into 8 equal sized pieces (like a pizza). 8. Roll the pieces into 8 ropes. 9. Slice the ropes into 1 inch long pieces. 10. Mix the water and baking soda together in a large pot and bring to a boil. 11. Place 8-10 pretzel bites into the water for 10-15 seconds (no longer than this or the pretzels will have a metallic taste). Scoop the pretzel bites out of the water with a slotted spoon or strainer. Allow as much excess water to drip off of it as possible, then place the bites on to the baking sheet. Sprinkle them with the pretzel salt while they're still wet. Repeat with the remaining pretzel bites. 12. Bake for 15 minutes until golden brown. Brush with the melted butter and enjoy.
